This blog is about simple things done exquisitely well. What could be simpler than bacon, sausage and eggs for breakfast? That’s hard to mess up. I don’t think I’ve ever had a bad plate of it. Not even at Denny’s.
So when I walked in Salt’s Cure and ordered their 2 x 2 x 2, which consists of two slices of bacon, two sausage patties and 2 eggs, I was expecting a lot. After all, the proprietors, Chris Phelps and Zak Walters, are known for their mastery of all things meaty.
Somehow they managed to surpass my great expectations. The secret must be the superbly sourced meat. Seasoned only with salt and a few herbs, the patties were so rich and savory that it only took one bite to tell that you were as far from Denny’s as Oz is from Kansas. The bacon truly tasted homemade–if your home happened to have access to the finest pork in the country.
Just goes to show you–there’s nothing so simple that it can’t be done beautifully.
